Abstract

The doctoral thesis focuses on analyzing the crucial role of food markets in urban supply throughout history,from antiquity to the present day. It highlights their resurgence in the19th century, influenced by hygienic improvements and enlightened conveniences, and their subsequent adaptation to compete with large commercial surfaces in the 20th century, through diversification of uses.Special attention is paid to the province of Cadiz, where emblematic markets such as the neoclassical La Libertad in Cadiz, the Central Market of Jerez with a combination of traditional and modern construction systems, and the innovative Ingeniero Torroja Market in Algeciras, built with reinforced concrete, are found. Additionally, other Cadiz markets from the 18th century are examined, such as Sanlúcar de Barrameda,Puerto Real, Puerto de Santa María, Tarifa, La Línea de la Concepción,Medina Sidonia, and the remodeled market of San Fernando. The proposed study seeks to assess the cultural heritage of these markets,understand their architectural evolution, improve their conservation, and enrich the available bibliography on this topic, with the aim of contextualizing their origin, evolution, and relationship with other markets nationally and internationally
